Food on Sunday
here's a new thing i'm trying. i'm going to post good, quality recipes for ways to eat healthy and clean and tasty on Sundays. Feel free to email me recipes throughout the week and I will try them out and post them each Sunday.
Breakfast:
Caffe Napoletana -- you will need a macchinetta napoletana for this. they look like this:
if you buy one and need to learn how to use it, just call me, email me or ask me in the box and i'll help you out. it's strong, stronger than espresso and better tasting. so go easy.
3-5 cage free eggs -- scrambled with olive oil
center cut bacon (less sodium and better tasting)
strawberries, blueberries, blackberries
1/2 - 1 avocado
Lunch:
Chicken Sausage w/ zucchini, onions and garlic
2-3 sausages
1 zucchini
1/2 onion
1 clove of garlic
in frying pan: heat about 1-2 tablespoons of olive oil
add sausages -- cut into bite size pieces -- cook for about 3 minutes
add zucchini and onion -- again cut into bite size (1/2 inch pieces)
add garlic (sliced paper thin)
add dried basil
saute over medium heat for about 5-10 minutes depending on how well your like your food cooked.
DINNER:
land and sea mixed grill:
pork chops (rosemary and olive oil)
swordfish (marinated in olive oil, lemon juice, wine, garlic)
Garden Salad w/ oil and vinegar dressing
for the pork chops -- crush dried rosemary and mix with olive oil and baste the pork chops just prior to grilling.
for the swordfish -- take 1/2 cup white wine (dry is best, pinot grigio), 1/4 c olive oil, 1/4 c lemon juice, 2 garlic cloves minced, sea salt and black pepper
mix together and marinate the swordfish in the fridge for at least 4 hours.
charcoal grill is best, but if you don't have a charcoal grill a gas one will work just fine.
make sure the pork chops are cooked all the way through. 160 degrees for the internal temp. probably about 6 minutes per side.
cook swordfish about 10 minutes total, 5 minutes per side.
for the salad: just throw a bunch of fresh, raw garden veggies into a bowl and toss with olive oil and balsamic vinegar and some herbs and you're good to go.
there you go, a good day of eating.
I like the new idea on Sunday posts!
Tried out the chicken sausage w/ zucchini this evening for dinner. Didn't have an onion on hand but added a base of fresh steamed spinach and a couple cherry tomatoes instead for variety. Optional addition of a couple cubes of feta cheese. Excellent recipe!
